As I never use Internet Explorer or their email, can I remove the programs without causing 'some' catastrophic Windows problems?

Unfortunately you cannot remove Internet Explorer. It comes bundled with Windows and that nice Mr Gates won't sell you one without the other. Word on the streets is that following a lengthy court case in the EU areas, Windows 7 will be shipped without a browser of any sort but I'm afraid that won't help you in the short term.
