photoshop B+W

Hello,
when i open a black and white image or turn a coloured image black and white photoshop text tool only lets me use black and white. trying to change to a colour only changes the shades of b+w.
I cant even use colour overlay as that just shades too
any help anyone

Change mode back to RGB/CMYK.
